-1 tablespoon olive oil
-1 Meridian Korma Sauce
-3 cups mixed vegetables, blanched (carrots, green beans, broccoli, cauliflower, potatoes, green peas etc.)
-1 cup Naturalli long grain brown rice, cooked
-2 tablespoons melted butter, salted
-1 tablespoon cumin seeds, roasted
Handful cilantro, chopped
Handful roasted cashews, roughly chopped
1.Heat olive oil over a medium heat in a large saucepan and add blanched vegetables. Brown for 5 – 7 minutes. Add Korma sauce and stir to combine. Cook for a further 5 minutes.
2.Combine roasted cumin seeds and melted butter and blitz in the microwave for 30 seconds.
3.To serve, drizzle cumin butter over steamed rice & garnish Vegetable Korma with roasted cashews & freshly chopped cilantro. Enjoy hot!
•The beauty about this dish is you can pick and choose the veggies you like. To blanch, put veggies into boiling salted hot water for 5 minutes and then plunge into ice water to cool. These will make sure the veggies stay super fresh.
